Am I correct in thinking that when the boat is lifted out of the water and the drives are in the down position, all the water will drain from each leg and therefore no salt water is retained that can freeze. I will be antifreezing next weekend but i'm curious as to whether they fully self drain.

Dunno if "fully" is 100% correct. Anyway yes, most water self drains from Bravo legs, BUT!
Most of the raw water in your cooling circuit is elsewhere, and doesn't self drain for good: pump, block (or in the heat exchanger if you have a closed cooling) and headers.
Which engines are you talking about?
 
Mercruiser diesels...... They have a closed cooling system and I will flush and antifreeze the raw water side next weekend. Until then the engine bay will be heated but I was just a little concerned that the leg may retain water that could freeze between now and when I antifreeze the block.
