recent and smaller built has to be the Salpa 385 Laver and Mano Marine 38.50 both offer proper 3 cabins but 1 head under 40 feet

Or if you want 3 "cabins" with the greatest economy, the Motorcat MC30 is actually an intriguing little boat! Just read about someone cruising from North Carolina down through the Bahamas and back for 7 months in one. He was used to larger boats but said it was fabulous.
the Aquador is not a proper 3 cabin as it has a similar concept as the one used for the Windy 40 vee shaped berth forward and two double cabins midship
