Any Fairline phantom 48 owners that could help me?

Hello new owner here. Have just brought a 2010 fairline phantom 48 located in Italy

Having read the user guide I’m at a loss as to how to get rid of grey/black water
I have read the manual the gauges are confusing and I believe the tanks are full

If anyone could give me advice over the phone it would be massively appreciated

There will be a "Y" valve where you can switch from emptying the tank at dockside to emptying the tank at open sea. Maybe you can get a better idea if you use this link? (Click on any image to go to the article the image is from)
