How easy is it to rock up and secure ride? I'm a reasonably experienced on foredeck and happy in the pit or on mast?

Just wondering like.

In fact, how easy is it for someone with a decent level of experience, fresh YM Offshore in pocket to get work / berth out there?

Not easy to find work (assuming by work you mean paid) but to get a ride during race week pretty easy, easier if you have experience as foredeck it seems. Its worth being there a few weeks before and get to know some of the boats that will be getting ready, and do some socialising. 2003 I had a great time on a Fast 40 a South African boat.
Go for racing class, lots more fun!
You often wont get a berth as there are more crew than berths on most boats.

I had a fantastic time racing in the Antigua Classics about three years ago and helped out on the registration side in the Antigua Yacht Club (AYC) during the series as well. Assume you are talking about the 'serious' racing though where it may be a little more difficult to get on the top boats, who are preparing well before the week starts. Have a word with the ATC as soon as you get there and let them know you're after a berth. They usually have a sort of 'waiting' list that skippers short of crew can consult.
