My new to me boat has a Lofrans Caiman 1000W Windlass with 80 Meters 8mm chain and a 20 Kg anchor. I plan to do some gigging in up to 100M depth so Id need to add at least 100M to the rode. I don't want to put that much chain on and I'm wondering if I'd be OK putting 100M of rope behind the existing 80M chain and, if so, what's the best rope to use etc.

Do you really have to anchor in depths of 100m? I would be more worried of burning the motor in the windlass

Be pretty unusual to anchor in 100m depth. Consider the scope you'd need - say 5 to 1, you need half a kilometre of rode. (you need a lower scope ratio in deeper waters).

Some good fishing spots in the bay at that depth but you have to get right on the money for gigging. I wouldn't be doing it in any kind of heavy weather and 1.5 to 1 would be enough to keep the boat in position while fishing. My worry is also burning the motor and I may need to cut the chain back to 20M and use rope for the rest.

I guess anchoring in that depth is for fishing?
We have anchored, well kedged really, in lots of water to avoid the tide carrying us back when racing. We used a light anchor, a few metres of chain and a 220m spool of blue 'lorry rope'.
The scope you need is a much lower multiple of the depth, 2:1 or less often works fine.
You are going to have an issue with 80m of chain and an anchor hanging vertically in 100m of water, that is a lot of weight and the transition from rope to chain on the windlass will be difficult I expect.
Better to rig a a kedge with a lighter anchor and not much chain. A weight on the rode some way down may help avoid dragging and/or snatching, you can experiment with this, but we find a weight closer to the boat than the anchor, so it's always off the bottom beneficial. I like the weight to be aboard before starting to lift the chain.

I'd use a small, cheap old anchor and not much chain. The best fishing spots are probably like the best dive spots, wrecks and other stuff to foul the anchor?
A little 'lunch hook' is often fine unless there is very strong tide.
Leave your proper anchor and chain intact in case you need to seriously anchor.

No tides to worry about in the Aegean. Not too many wrecks either. Best fishing mostly rocky peaks surrounded by deeper water. You’re right though I’d definitely like to keep the main anchor intact so I’ll probably rig 200M rope and some chain in a deck basket with a light grapnel anchor and use an anchor ring for recovery.

As lw395 suggests, do as the Greek fishermen do and use a rebar grapnel and polypropylene rope. These anchors are sold everywhere in Greece, quite cheap. You could haul that by hand without too much trouble to save the windlass.
