A New 27 Sports Weekender. 2x O/B's layout and specs?

If you were looking at a sports performance weekender 27 which is to be fitted with twin 200HP outboards what would you consider essential items. A craft for both UK and periodically Med. Hard Top? T Top with removable covers? More deck than cabin? Kitand equipment?
I would be interested in thoughts, reccomendations, likes and dislikes.
 
I'd probably want different things depending on where I was boating, although I guess there would be some things common to all boating locations.

Common things:-
Toilet with holding tank and macerator
Freshwater tank with basin in cabin or cockpit and shower on transom.
Sleeping area in cabin big enough for 2 people
Fridge
Fast/hull that can handle a big ish sea
Large fuel tank, to give 200-300 mile range.
Plenty of storage space, somewhere to put fenders away, where they won't get in the way
Self bailing cockpit


Things I'd want in the med:-
Removable sun shade,not permanent hard top
Plenty of deck space
Sunbathing area (could be on the bow)
Large bathing platform (not compatible with twin outboards)
Outside space more important than covered space

Things I'd want in the UK:-

Enclosed /covered cockpit
Less bathing platform
Less Sunbathing space
Hot running water
Covered space more important than outside space

For context I currently own a windy 25 in the med

Thanks julians, your basics are essential and outlined. T Top permanent or removable is a consideration. Simple non mechanical full flexible sunroof with optional enclosure for attaching to 'tubular type' frame clipped combing for styling (open all for the med attach all for average UK trip were my thoughts. Over and enclosing central sprung bench seat helm incorporated into 'cockpit under helm seat box with a cooler, fridge and alcohol stove. The definitive list is out there somewhere. The sunbathing platform for the med with recent solutions and to accomodate a small stern to shore access device I think is 'doable'.
