I've crossed lyme bay (50 miles) in my outboard powered Saver 690 (my profile photo boat). Started off as a F2 but ended on F5 halfway through.

You should get around £3,500 for the Yammy - maybe more if you can sea trial to a prospective buyer.
I never buy a bigger engine without a sea trial...
I've had a selection of inflatables from a Redcrest to a Honwave.
Thee Honwave was 3.2 meters long with an inflatable V floor. Fitted with a 15 EFI Mariner it would top out at 19 knots on flat water. The floor would start to deform which limits the speed.

I've often though what a paddleboard will do with a 3.5 Tohasu on the back.
