Is there any benefit in going for 2X100W, rather than 1x200W panel, connected to a MPPT controller? Fitted on a motor boat, so no shade problems from boom/sails.

Yes, if one breaks it loses output. If you have two, the other one will keep working.
P.S. Two in series, 24v may give better charge if no shading as you say.

I wouldn't fit tow for redundancy, but i would fit two and wire them in series to a MPPT controller (as Graham suggested above).

Have a look for domestic PV panels. They are typically 200+ watts at 40v ie like 2x 12v (20v) panels in series. Vastly cheaper than typical 12v (20v) panels as used on boats. Cheaper because they are used in huge quantities. (our club has 200 of them on the roof. Our state has something like 40% all dwellings have at least 3kw of these panels on the roof. So 100 of thousands have been fitted. Yes mostly from China some German but cheap and good. They also tend to be a bit smaller over all for power. ol'will
