I’ve got a switch on my helm that turns the transmit off on my digital yacht AIS. I use it regularly ?

Depends on the model and where it is mounted to some extent. I'd need to confirm but mine has a single connection to control transmit. I ran a wire from there to a suitable point and installed a switch with the other connection leading to a -ve connection. Closing the switch shorts to -ve and transmit is turned off. I think it can be wired differently to send a MAYDAY message instead. Check your manual to see how that works.
Power control is just a matter of cutting the +ve and inserting a switch. You need to trace the wire back and find a convenient point to cut and run wires from a switch to either side of the cut. It could be wired to your plotter or some other gear, just make certain you insert the switch at a point where the wire only goes onwards to the AIS. You said it is always on and that makes it likely that it is on a circuit wired directly to the battery with a fuse in there as well). Starting point is to get the make and model, then find a manual.
